En tant que Brasseur, tu es le maître d’orchestre de ta brasserie : tu es responsable de ta bière du grain… jusqu’au sourire du client. Tu travailles sous la responsabilité directe du Directeur de restaurant, tout en étant un partenaire clé de l'équipe de gestion. Chez nous, le brasseur ne travaille pas uniquement en arrière-scène : il fait partie intégrante du spectacle et de l'expérience client.à

  • Brasser la gamme de bières en respectant rigoureusement les fiches techniques, recettes et standards de qualité de l'enseigne.
  • Suivre et contrôler chaque étape de fermentation, de garde, de filtration et de conditionnement pour garantir la constance du produit.
  • Effectuer les contrôles physico-chimiques de base (densité, pH, température) et consigner les données de brassage.
  • Gérer les inventaires et l'approvisionnement en matières premières (malts, houblons, levures) et produits d'entretien.
  • Établir le calendrier des brassins en collaboration avec le Directeur de restaurant selon l'achalandage et les prévisions de ventes.
  • Participer au contrôle des coûts de production et analyser mensuellement les indicateurs de performance du rayon brasserie.
  • Effectuer le nettoyage et la désinfection des cuves, des canalisations et des lignes de tirage selon les normes établies.
  • Assurer l'entretien de premier niveau des équipements brassicoles et signaler tout besoin de réparation à la direction.
  • Maintenir la zone de brassage conforme aux exigences de salubrité (SIMDUT) et de santé/sécurité au travail (CNESST).
  • Former le personnel de salle et de bar sur le profil des bières pour faciliter le conseil et les accords mets-bières.
  • Échanger avec la clientèle curieuse pour partager la passion du produit et expliquer le processus de brassage sur place.
  • Appuyer le Directeur de restaurant dans l'organisation et l'animation d'activités ou d'événements liés à la bière.
  • Collaborer avec les animateurs brasserie et suivre les directives des services de bière et services supports.
  • 1 à 3 ans d’expérience en brassage opérationnel (microbrasserie, pub, etc).
  • Connaissances : Maîtrise des normes d'hygiène et de salubrité alimentaire (SIMDUT).
  • Diplôme, attestation ou certification en technologie brassicole / brassage artisanal (ou expérience équivalente) un atout.
  • Maîtrise des procédés de brassage et de conditionnement selon des fiches techniques précises.
  • Rigueur d'exécution et capacité à appliquer des standards de qualité constants.
  • Aptitudes pour la mécanique de base, la plomberie et l'entretien d'équipements sous pression.
  • Esprit d'équipe développé pour travailler en étroite synergie avec le Directeur de restaurant.
  • Aisance relationnelle et capacité à vulgariser la bière auprès de l'équipe et des clients.
  • Rigueur dans la gestion de son temps et ajustement du rythme de travail selon l'activité du restaurant.

En fonction des besoins opérationnels de l’entreprise, vous pourrez être affecté, avec votre accord, de façon permanente ou ponctuelle dans tout restaurant actuel ou futur de l’enseigne. Les affectations ponctuelles pourront notamment prendre la forme de missions temporaires, de remplacements ou de renforts opérationnels.

As a Brewer, you are the conductor of your brewery: you are responsible for your beer from grain... to the customer's smile. You work under the direct responsibility of the Restaurant Manager, while being a key partner of the management team. With us, the brewer does not work solely behind the scenes: they are an integral part of the show and the customer experience.

Responsibilities

  • →Brew the range of beers while strictly adhering to the technical sheets, recipes, and quality standards of the brand.
  • →Monitor and control each stage of fermentation, lagering, filtration, and packaging to ensure product consistency.
  • →Perform basic physico-chemical checks (density, pH, temperature) and log brewing data.
  • →Manage inventory and supplies of raw materials (malts, hops, yeasts) and cleaning products.
  • →Establish the brewing schedule in collaboration with the Restaurant Manager based on foot traffic and sales forecasts.
  • →Participate in controlling production costs and analyze monthly performance indicators of the brewery department.
  • →Perform cleaning and sanitization of tanks, pipes, and draft lines according to established standards.
  • →Provide first-level maintenance of brewing equipment and report any repair needs to management.
  • →Maintain the brewing area in compliance with sanitation (WHMIS) and occupational health and safety (CNESST) requirements.
  • →Train floor and bar staff on beer profiles to facilitate customer advice and food-beer pairings.
  • →Engage with curious customers to share passion for the product and explain the on-site brewing process.
  • →Support the Restaurant Manager in organizing and hosting beer-related activities or events.
  • →Collaborate with brewery coordinators and follow directives from beer services and support departments.
  • 1 to 3 years of experience in operational brewing (microbrewery, pub, etc.).
  • Knowledge: Mastery of hygiene and food safety standards (WHMIS).
  • Diploma, attestation, or certification in brewing technology / craft brewing (or equivalent experience) an asset.
  • Mastery of brewing and packaging processes according to precise technical sheets.
  • Rigor of execution and ability to apply consistent quality standards.
  • Aptitude for basic mechanics, plumbing, and maintenance of pressurized equipment.
  • Strong teamwork skills to work in close synergy with the Restaurant Manager.
  • Strong interpersonal skills and ability to popularize beer knowledge for staff and customers.
  • Rigor in time management and adjusting work pace based on restaurant activity.

Depending on the company's operational needs, you may be assigned, with your consent, permanently or temporarily to any current or future restaurant of the brand. Temporary assignments may notably take the form of temporary missions, replacements, or operational reinforcements.
