CNS Group is seeking an enthusiastic and dedicated Pastry Chef Assistant for a luxury hotel in Zanzibar. The role is responsible for supporting the Pastry Chef in daily pastry and bakery production, assisting in the preparation of desserts, pastries, breads, and confectionery items, and maintaining the highest standards of hygiene and food quality within the pastry section. The ideal candidate should possess a foundational understanding of pastry techniques, a genuine passion for the baking and confectionery arts, and a disciplined and detail-oriented approach to work within a luxury hospitality environment.
Responsibilities
~2 min read- →Assist the Pastry Chef in carrying out daily pastry and bakery production tasks including the preparation of desserts, cakes, pastries, breads, chocolates, and confectionery items, following established recipes, portioning guidelines, and presentation standards consistently.
- →Execute assigned mise en place tasks for the pastry section under direct supervision, ensuring all pastry components, fillings, creams, glazes, and garnishes are accurately prepared, portioned, and ready ahead of each service period and special event.
- →Support the preparation and assembly of plated desserts, pastry buffet items, and confectionery displays under the guidance of the Pastry Chef, applying basic decorating and finishing techniques to maintain consistent quality and visual presentation standards.
- →Maintain a clean, organised, and fully operational pastry workstation throughout all stages of production and service, adhering to food safety, hygiene, temperature control, and sanitation standards in accordance with HACCP regulations and hotel policies.
- →Assist in the correct storage, labelling, and rotation of all pastry ingredients, dairy products, and perishable items in refrigerators, freezers, and dry stores to minimise wastage and maintain ingredient freshness at all times.
- →Support the Pastry Chef in the production of breads, viennoiserie, and baked goods for daily restaurant service, breakfast buffets, and special functions, ensuring consistent quality and timely availability throughout all service periods.
- →Participate actively in pastry skills development sessions, recipe testing activities, and team briefings organised by the Pastry Chef to continuously improve technical knowledge and pastry production capabilities.
- →Assist in receiving, inspecting, and storing incoming pastry ingredient deliveries under the supervision of the Pastry Chef, verifying quality, quantity, and temperature compliance as directed.
- →Support the cleaning, sanitising, and proper maintenance of pastry section equipment including ovens, mixers, proofing chambers, and preparation surfaces after each production and service period in compliance with hotel hygiene standards.
- →Coordinate cooperatively with other kitchen sections and the broader culinary team during service and banquet periods to ensure timely pastry production, smooth workflow, and seamless overall kitchen operations.
- →Observe and absorb pastry techniques, decorating methods, and production procedures demonstrated by the Pastry Chef, applying learned skills progressively to assigned tasks to support personal development and section productivity.
- →Report any safety hazards, equipment faults, ingredient quality concerns, or hygiene issues observed within the pastry section to the Pastry Chef immediately to maintain a safe, compliant, and efficient pastry working environment.
Requirements
~1 min read- Certificate or Diploma in Pastry Arts, Culinary Arts, Baking and Patisserie, or a related field is required.
- Minimum 1–2 years of experience in a pastry, bakery, or professional kitchen environment within a hotel, resort, or food service establishment is required.
- Basic knowledge of pastry preparation techniques, baking methods, and confectionery fundamentals is required.
- Understanding of food safety, temperature control, hygiene practices, and HACCP standards is required.
- Ability to follow instructions accurately, work cooperatively within a team, and maintain a positive and eager learning attitude in a fast-paced luxury kitchen environment is required.
- Physical stamina and ability to stand for extended periods during production and service is required.
- Experience working in a luxury hotel or resort pastry section is preferred.
- Candidates from NCT and other hospitality institutes are encouraged to apply.
- Multilingual candidates will have an added advantage.
- Proficiency in English communication is required.
