Mixologist (part-time)

At AC by Marriott Gold Coast, we’re bringing The Perfectly Precise Hotel to life — a stylish, thoughtfully edited experience where purposeful design, attention to detail and effortless service come together.

As a Mixologist, you’ll help create memorable beverage experiences across our Food & Beverage outlets, including Rivo Restaurant, bringing creativity, product knowledge and genuine hospitality to every interaction.

More than simply preparing drinks, you’ll be a host of the space — engaging with guests, sharing your knowledge and helping create an atmosphere that feels polished, relaxed and distinctly AC.

As part of our pre-opening team, you’ll also have the opportunity to help shape our beverage standards, service rituals and bar culture from day one.

• →Prepare and serve cocktails, spirits, wine, beer and non-alcoholic beverages to a consistently high standard.
• →Deliver beverage experiences across Rivo Restaurant and other hotel Food & Beverage outlets as required.
• →Use your product knowledge to recommend drinks and create personalised guest experiences.
• →Stay up to date with beverage trends, local products and cocktail techniques.
• →Contribute ideas for seasonal cocktails, signature serves and beverage activations.
• →Maintain beautifully presented, organised and fully stocked bar areas.
• →Ensure accurate handling of payments, transactions and cash where required.
• →Monitor stock levels and support beverage inventory and replenishment.
• →Anticipate guest needs and take ownership of the overall experience.
• →Follow all workplace health and safety, liquor licensing, responsible service and Marriott International procedures.

You’ll ideally bring:

• At least 1 year of relevant bartending or beverage experience.
• Strong cocktail-making and beverage knowledge.
• A genuine interest in current trends and creative beverage concepts.
• Excellent guest engagement and communication skills.
• Confidence recommending beverages and tailoring the experience to guests.
• Strong attention to detail, presentation and consistency.
• A proactive and energetic approach to service.
• The ability to work confidently across multiple Food & Beverage environments.
• Flexibility to work evenings, weekends and public holidays.
