The Culinary Team works closely with an established network of producers, with access to exceptional ingredients that define the seasonal menu. The culinary direction is well-established, under the guidance of Culinary Director Massimo Mele.
In this role, you will support the preparation and execution of service within Peppina, our award-winning Italian restaurant, delivering authentic, high-quality dishes and memorable dining experiences for our guests. Working closely with the wider culinary and Food & Beverage teams, you will contribute to a kitchen culture focused on quality, consistency, and exceptional guest satisfaction.
As a hands-on member of the brigade, you will play an important role in maintaining efficient kitchen operations, ensuring every dish reflects Peppina's commitment to seasonal produce, traditional Italian flavours, and premium dining standards.
- Prepare, cook, and present menu items in accordance with Peppina's culinary standards and recipes
- Ensure all mise en place is completed efficiently and to the required standard before service
- Maintain consistency in food quality, presentation, and portion control
- Work collaboratively with the Kitchen and Food & Beverage teams to deliver a seamless guest experience
- Assist with stock rotation, storage, ordering processes, and minimising food wastage
- Maintain a clean, organised, and safe work environment at all times
- Ensure compliance with food safety, hygiene, and workplace health and safety standards
- Support the team during high-volume service periods while maintaining attention to detail
- Contribute positively to a professional, respectful, and team-focused kitchen culture
- Continuously develop culinary skills and product knowledge under the guidance of senior chefs
- Previous experience in a professional restaurant, hotel, or premium dining kitchen
- Passion for food and a genuine interest in Italian cuisine
- Strong understanding of food preparation, cooking techniques, and kitchen operations
- Knowledge of food safety, hygiene, and HACCP principles
- Ability to perform effectively in a fast-paced, high-pressure environment
- Strong attention to detail and commitment to quality
- Positive attitude with a willingness to learn and take direction
- Excellent teamwork and communication skills
- Flexibility to work a rotating roster, weekday, weekends, and public holidays - working evenings is a required,
